I highly recommend Statistics for Psychology, Pearson, by Aron, Aron & Coups, even if you've just aced your stats class. It does a great job of walking you through statistical analyses step-by-step.

I also highly recommend the text Discovering Statistics Using R, Sage Press, by Field, Miles & Field. Last year this was a required text, but you don't absolutely need it and it covers much more than we talk about in class. The companion website for this text is here.
